I don't get this....?

Ok when your mentioning a word that starts with a vowel u have to put 'an' in front of it right?like an elephant, or an onion... but how com you cant say an union.... is it a union or how bout an unicorn.... dont say its uni words cause cant you say an uninteresting person...etc...i'm stumped
